Chicken Salad Avocado Sandwich

Ingredients
- 1 chicken breast, cooked and shredded
- ½ ripe Mission avocado, smashed
- 2 tbsp mayonnaise
- ½ tsp salt
- ¼ tsp pepper
- 1 tbsp green onions, optional
- 1 tbsp parsley, optional
- 1 red onion, sliced
- ½ Mission avocado, sliced
- 1 tomato
- lettuce
- 4 pieces whole wheat bread
Directions
In a bowl, mix together the chicken, smashed avocado, mayonnaise, salt, pepper, green onions, and parsley.
Divide the chicken mixture between the two slices of bread. Top the chicken with red onion slices, sliced avocado, tomato, and lettuce.
