Mexican Style Shrimp Avocado Toast

1 ripe Mission avocado

2 slices whole wheat bread, sliced thick

½ tsp salt

1/4 lb shrimp, cooked

¼ cup cherry tomatoes cut in half

1 lime, juiced

¼ cup fresh cilantro, minced

2 eggs, fried or poached



In a small bowl, mix together the shrimp, cherry tomatoes, salt, lime juice, and cilantro. Set aside.

Toast slices of bread using your favorite method. Using a fork, smash ½ a ripe avocado on each piece of toast. Top with the shrimp mixture and a fried egg. Finish with minced cilantro and freshly ground black pepper.
