Mission Mango & Avocado Salsa

Hi, it’s Emily here from @Lettuce.Thrive! I am joining forces with Mission Produce to bring you a pineapple-mango salsa perfect for your summertime BBQ’s.
Like many of us, I love to try and recreate restaurant dishes at home and this one is no exception. When I was 18, I got my first restaurant job at a fish house, the only problem was… I didn’t eat fish. But, I took my job seriously and wanted to know what everything on the menu tasted like so I could accurately describe it to the patrons. I tried every side, sauce, and dip on the menu. When I tried the pineapple-mango salsa, I was hooked! It has everything. It’s salty, sweet, spicy, bright, and fresh. What more could you ask for? I went home and started recipe testing and quickly found out that it is actually so easy to make! So easy that I’m still making it 10 years later. This salsa could be thrown together for a weeknight dinner to top fish, barbacoa tacos, or as a show-stopping appetizer for your next BBQ. The opportunities are endless!
Because there are so few ingredients in this recipe it is important you choose high-quality, ripe produce such as Mission mangos and Mission avocados to get a fresh and vibrant flavor. On both the mangos and avocados, you can tell when they are ripe by gently feeling for uniform softness. If they are a little soft with some give, they are ready to use!

Ingredients
2 Mission Mangos, diced into 1/4 inch cubes
1 Mission Avocado
1/2 cup diced red onion
1/4 cup chopped cilantro
1/2-1 jalapeño, diced
juice of 1 lime (around 3 tbsp juice)
1/2 cup diced pineapple
1/4 tsp salt (or to taste)

Combine all the ingredients in a bowl and serve.
