Avocado Lime Dressing


  • 1 ripe Mission Avocado
  • 2 limes (approx. 3 tablespoons juice)
  • ½ cup coconut water,* more as needed for thinning
  • 1 garlic clove, minced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Optional: raw honey, to taste


  1. Combine all ingredients in a blender (or use an immersion blender) and blend until smooth.
  2. If necessary, add more coconut water to reach the desired consistency.
  3. Store in an airtight container in the refrigerator.
